WATERBURY, CT. 03 March 2009-030309SV04--Larry Birkenberger, plant manager, checksone of the levels of the incinerator at Synagro Technologies in Waterbury Tuesday. Torrington is one of three sites in the state handling food service grease collection, which is on a big increase ahead of a 2011 regulation requiring all food service facilities to be responsible for keeping their grease out of the sewer system. The grease collection gets drained of water and food particles and shipped to Waterbury, where Texas-based Synagro turns it into biofuel.<br />
